Paleo Chocolate Pudding

Ingredients 2 ripe avocados 1/2 cup cocoa powder 1/2 cup honey 2 tablespoons coconut oil 1 teaspoon vanilla Directions Whip all ingredients in a food processor and spoon into bowls to serve.  It will be really thick. Enjoy!

Spinach Salad

Ingredients 2 bunches fresh spinach 1 bunch scallions, chopped juice of 1 lemon 1/4 tbsp olive oil pepper to taste Directions Wash spinach well. Drain and chop. After a few minutes, squeeze excess water. Add scallions, lemon juice, oil and pepper. Makes 6 servings. Enjoy!
