This is a delicious and easy way to prepare salmon. The recipe is from Tasty Paleo.
Prep Time: 5 Min. Cook Time: 20 Min. Servings: 6
- 4 oz basil pesto, homemade or “crap free”
- 1-1/2 lb filet of wild caught salmon, 1/2 to 3/4 inches thick
- 2 Tbs Parmesan Cheese (optional/not Paleo)
Preheat the oven to 400 degrees F. Place the salmon, skin side down in a shallow pan with sides. Salt and pepper to taste. Use a spoon or fork to cover the salmon evenly with the pesto. Bake for 15 – 20 minutes until done. It will lighten to a “salmon” color. Do not over cook. Grate parmesan over the hot salmon if desired and serve.
